Pressure Cooker Corned Beef and Cabbage Recipe







Ingredients:

4-6 cups water to just cover the brisket.
2 ½ - 4 lbs point cut corned beef brisket with spice packet
3 garlic cloves, smashed and coarsely chopped
2 bay leaves
4 carrots , cut into 3 inch pieces
1 head cabbage , cut into 6 wedges
6-8 peeled and quartered potatoes
3 peeled and quartered turnips or celery (any additional veggies you enjoy)
1 round onion quartered into wedges (optional)
horseradish sauce (optional)


Directions:


  1. Pour water into pressure cooker.
  2. Add brisket; over high heat, bring water to a rolling boil.
  3. Skim residue from surface and spice packet.
  4. Add garlic and bay leaves and secure lid.
  5. Over high heat, bring to high pressure.
  6. Reduce heat to maintain pressure and cook 45mins to 1 hour.  Check for tenderness.  If you overcook it the meat will fall apart into shreds and we don't want that.  You'll want a soft tender intact slices of corned beef.
  7. Release pressure according to manufacturer's directions and remove lid.
  8. Add vegetables to brisket and liquid, stirring gently.
  9. Secure and lock lid over high heat, bring steam to high pressure.
  10. Reduce heat to maintain pressure and cook 6 minutes.
  11. Release pressure according to manufacturer's directions.
  12. Remove lid.  Cool pressure cooker over running water after releasing pressure valve.
  13. Plate dish and serve with bread/rolls with butter or how we kaukau in Hawaii with hot steamed rice!
  14. Simple and fast.  Crockpot cooking is for people who want to wait.  Not me I want to cook fast and kaukautime!!  LOL  :D


Serve with horseradish sauce or yellow mustard.  In Hawaii we also got shoyu or soy sauce with tobasco sauce mixed together instead of the yellow mustard or horseradish sauce.  Get da rice let kaukau now!!

Hawaiian Beef Stew

Hawaiian Beef Stew
"Chinese cooks at Hawaiian ranches made stew on an open fire, tossing the less-than-tender beef into a pot of water to simmer all day long, then adding vegetables shortly before the cowboys (paniolos) came in."


 
Ingredients:


2 pounds stewing beef (recommends chuck roast, oxtail, short ribs or a combination of)
2 tablespoons vegetable oil
3 large onions
2 (8 ounce) cans tomato sauce (or 1 (6 ounce) can tomato paste)
6 medium potatoes, peeled and quartered
2 large carrots, cut to the 1-2 inch pieces

2-4 stalks celery, cut into 1-2 inch pieces (optional) I add to mine.
6-8 cloves garlic
2 inch fresh ginger sliced in half and crushed.

1-2 bay leaves ripped in half
Hawaiian salt (coarse sea salt) to taste

fresh cracked black pepper to taste

Thickener:
4 tablespoons flour or cornstarch
pinch of sugar or stevia sweetener
1 tablespoon soy sauce (light soy sauce)
1 cup water


Preparation:

Finely mince the garlic and half of one of the onions.  Heat the cooking oil in a large pot.  Add the garlic, ginger, bay leaves, and onions and brown.  Add the beef and salt and saute until beef is thoroughly browned.  Add tomato sauce and enough water to cover the beef.  Bring to a boil, then turn the heat down and simmer covered, until meat is tender - a half an hour longer (longer for short ribs).

Meanwhile, cut the remaining onions into wedges (six to an onion).  Add the potatoes to the pot and again bring to a boil.  Replace the lid and simmer another half hour.  Add carrots and cook 15 minutes; add the onions; simmer another 15 minutes.
Mix the thickener ingredients (flour, sugar, soy sauce and water) in a small bowl.  Make sure to get all the lumps out. Bring the stew back up to a boil.  Add thickener, stirring constantly until well combined and thickened.  Simmer another 10 minutes. 

Serve on plates over steaming hot white rice with a side of macaroni salad for a authentic Hawaiian style plate lunch!

Make sure you got a big pot before anything else!  The beef stew will be better the next day as the flavor gets richer.  Skim off the fat at the top before reheating portions.

Secret tip: add a tsp of white or apple cider vinegar to the stew so it lasts longer especially if you bring it to the beach and you don't want it to spoil from reheating.  The acidity keeps it under control.

Serves 6 to 8

SPAM & Cabbage Stir Fry

















Ingredients:

1 can SPAM
1/2 onion chopped
1 potato boiled or microwaved cooked, peeled and cubed (optional)
1 medium chopped ripe red tomato (optional)
1 medium cabbage sliced then chopped   
1 clove garlic crushed and minced fine
1/4 C Shoyu
fresh cracked black pepper to taste
1 bay leaf ripped in half
Canola Oil

Cooking Instructions:


Cut SPAM into strips or diced.
Slice half a round onion and chop and one medium cabbage thinly.
Chop one clove of garlic.
Heat canola oil in frying pan or wok
Add SPAM & all other ingredients.
Cook until cabbage is wilted and soft.
Serve over rice.

Hawaiian Style Beef Curry Stew





Hawaiian Style Beef Curry Stew

Ingredients

5 lbs Stew meat or beef brisket, cubed (more if you gotta have meat!!)
2-4 medium Potatoes, cubed
1 large Onion, quartered
2-4 large Carrots, sliced
3-4 stalks Celery, diced
3-4 Tbsp Curry powder (or more depending on your tastes)
4 C Water
2 cubes Beef bouillon
2-3 tsp. Salt (or more to taste)
1/2 C cornstarch and water
3-4 Tbsp Flour
1 stick of butter or margarine
Fresh cracked black pepper to taste
1-2 whole sweet green bell pepper (optional)
1-2 Tbsp canola oil
water

Cooking Instructions


Heat a frying pan with oil, add stick butter and melt over medium heat. Add flour to melted butter and oil to make a roux. Fry flour to a nice golden brown but be careful not to burn it. Add meat and brown on all sides. Place browned meat in pot with water to just cover meat and beef bouillon cubes. Cover and cook for 1 hour. Simmer 1/2 hour longer. Then add curry and vegetables. Cook covered until potatoes are done. Add salt then stir in cornstarch water slurry paste.

Enjoy!!

Serves an army!! hahaha :)

Serve with hot steamed white rice and your side of macaroni salad and you got a Hawaiian plate lunch!!
