PREFACE: This video is a rerun. If you've seen it before, don't feel the slightest obligation to watch it again. YouTube deleted it because of "view-count gaming.” This absurd accusation...

Zippy's Chili Recipe

Ok this is my take on it.  Look below for actual recipe.

Ingredients:

3-4 lbs Lean ground beef (more if you want meaty)
2 lbs Portuguese sausages
1 large Onion, chopped
2-4 large cloves garlic crushed and minced fine
2 C Celery, chopped
2 C Bell pepper, chopped
2 large can Kidney beans
2 large can tomato sauce
1-2 Tbsp tomato ketchup or paste
2-4 Tbsp Red wine
2 Bay leaves, ripped in quarters
1 tsp Chili powder (check the heat. More if you want it spicy)
1 Tbsp Chicken boullion powder or substitute with 1 can no salt canned chicken broth
1 tsp MSG (monsodium glutamate) optional but I don't use it.
1 Tbsp Sugar
1 Tbsp Oregano powder
1 Tbsp Paprika powder
1 Tbsp Cumin powder
1 Tbsp Ginger powder or fresh ginger root minced
Dash Worcestershire sauce to taste
Black pepper to taste
Hawaiian rock salt to taste.  Go easy with this.  :)
Purified water as needed

Garnish with:
Shredded cheese (pepperjack/cheddar blend)
Sliced green onions

Cooking Instructions:

Brown ground beef, drain oil and set aside. Saute sausage, add onions, garlic and veggies, spices, and other ingredients. Simmer for a few minutes.  Add water if needed if it gets dry. Add ground beef back to the pot, stir and simmer for about 30-45mins till meat and beans are tender.  Don't overcook the beans.  You can go vegetarian by omitting the meat.

Secret Ingredient:

Just before serving, stir in 1-2 Tbsp Best Foods Mayonaise to soften and bring down the heat and tartness of the tomato sauce and chili powder.  More to taste.

Yields 6-8 servings or 1 big Hawaiian.

Serve with rice and mac salad.  Onolicious let's kaukau!!  :D

Enjoy!!  :D

Filipino Pork Guisantes

Ingredients:

3-4 pounds boneless pork country style ribs

4-6 cloves garlic

4-8 bay leaves

1-2 tablespoon patis (fish sauce to taste)

1 tablespoon freshly cracked or coarsely ground pepper to taste

2 large yellow onions, sliced

1/2 cup water as needed

1 cup tomato paste or 4 cans unsalted tomato sauce

2 teaspoons chopped or sliced pimentos (sweet bell pepper) or 1 jar fancy chopped or sliced sweet pimentos with the juice

2-4 cups frozen peas

2 sticks of cinnamon

Instructions:

Separate the fat from the lean in the pork and slice the pork into stir-fry-size pieces. In a large saute pan, dutch oven or wok over high heat, saute pork fat until melted and drain off excess. (You don't need much more than a couple of teaspoons.) Reduce heat to medium-high and add garlic, bay leaves, black pepper, onion and lean pork. Stir-fry for 15-30 minutes or so until pork is cooked and browned well. Add water and simmer until it is evaporated. Add tomato paste/sauce and pimento and cinnamon sticks and simmer for a 30 minutes or so. Finally, add peas, stirring carefully to break up frozen clumps. Simmer more if meat is not yet tender;  Add more patis to taste.  Add sugar for sweetness Serve hot with rice.

Makes 6-10 servings.

Hawaiian Beef Stew

Hawaiian Beef Stew
"Chinese cooks at Hawaiian ranches made stew on an open fire, tossing the less-than-tender beef into a pot of water to simmer all day long, then adding vegetables shortly before the cowboys (paniolos) came in."

Ingredients:

2 pounds stewing beef (recommends chuck roast, oxtail, short ribs or a combination of)
2 tablespoons vegetable oil
3 large onions
2 (8 ounce) cans tomato sauce (or 1 (6 ounce) can tomato paste)
6 medium potatoes, peeled and quartered
2 large carrots, cut to the 1-2 inch pieces

2-4 stalks celery, cut into 1-2 inch pieces (optional) I add to mine.
6-8 cloves garlic
2 inch fresh ginger sliced in half and crushed.

1-2 bay leaves ripped in half
Hawaiian salt (coarse sea salt) to taste

fresh cracked black pepper to taste

Thickener:
4 tablespoons flour or cornstarch
pinch of sugar or stevia sweetener
1 tablespoon soy sauce (light soy sauce)
1 cup water

Preparation:

Finely mince the garlic and half of one of the onions.  Heat the cooking oil in a large pot.  Add the garlic, ginger, bay leaves, and onions and brown.  Add the beef and salt and saute until beef is thoroughly browned.  Add tomato sauce and enough water to cover the beef.  Bring to a boil, then turn the heat down and simmer covered, until meat is tender - a half an hour longer (longer for short ribs).

Meanwhile, cut the remaining onions into wedges (six to an onion).  Add the potatoes to the pot and again bring to a boil.  Replace the lid and simmer another half hour.  Add carrots and cook 15 minutes; add the onions; simmer another 15 minutes.
Mix the thickener ingredients (flour, sugar, soy sauce and water) in a small bowl.  Make sure to get all the lumps out. Bring the stew back up to a boil.  Add thickener, stirring constantly until well combined and thickened.  Simmer another 10 minutes.

Serve on plates over steaming hot white rice with a side of macaroni salad for a authentic Hawaiian style plate lunch!

Make sure you got a big pot before anything else!  The beef stew will be better the next day as the flavor gets richer.  Skim off the fat at the top before reheating portions.

Secret tip: add a tsp of white or apple cider vinegar to the stew so it lasts longer especially if you bring it to the beach and you don't want it to spoil from reheating.  The acidity keeps it under control.

Serves 6 to 8

let's eat kaukautime!!  :D

Cheeseburger Macaroni & Cheese Goulash

Yesterday for lunch I cooked "Cheeseburger Macaroni & Cheese Goulash". I had a huge bag of elbow macaroni from Sam's in the cupboard and hamburger in the freezer. My mom taught me this recipe when I was growing up. It's one of those type dishes for the whole family that spawned from eating Betty Crocker's Hamburger Helper. It's good on the budget and is very filling. You don't have to buy Hamburger Helper since this is made from scratch. Much more onolicious. Good to bring to potlucks since you can make choke amounts so everyone can take home. I'm watching my carb intake but been good at portioning my servings for a dish like this.

Ingredients:

2-4 Tbsp canola oil
2 lbs ground beef
2 cups elbow macaroni
4-6 cloves of garlic, crushed and finely minced
1/2 round onion, sliced and chopped fine
1 bay laurel leaf ripped in half to release aromatic scent
1 8oz can corn niblets
2 80z cans tomato paste or spaghetti sauce or ketchup
Dash pepper to taste
Dash salt to taste
Dash MSG to taste (optional)
6 inches of celery top of stalk with leaves, chopped finely
6-8 American cheese slices, more if you want it cheesier (cheddar may be subsituted)
1/2 block of butter or margarine to taste, to counteract the sourness of the tomato sauce

Instructions:

Follow directions on macaroni packaging.
Boil water in pot, add oil and salt.
Add uncooked macaroni and stir so macaroni doesn't stick together. Cooking times may vary according to cooking instructions on packaging. Usually 6-10 minutes cooking times. Cook until macaroni is aldente'.
Drain and rinse, set aside in strainer.
In another pot, add oil and heat.
Add garlic, onions, celery and bay leaves. Fry until onions are translucent. Do not burn garlic.
Add ground beef and brown. Mash meat up to break apart chunks. Cook till well done. Drain and spoon out excess oil.
Add tomato or spaghetti sauce. Bring to a high simmer then low simmer.
Stir in macaroni.
Add cheese and butter.
Stir in can of drained corn niblets.
Simmer til desired consistency of cheese and sauce approximately 8-10 minutes or until macaroni is tender.
Add optional sugar or Splenda for desired sweetness if you don't want it tangy and sour from tomato sauce.
Add pepper and salt to taste.
To get fancy you may place in a pyrex casserole dish and layer cheese on top and bake in the oven for 450 degrees for 20 minutes or until the cheese melts and browns.

Serves 6-8 or about a weeks worth of good eats.

Enjoy!  Let's kaukau!!
